Lombo de Porco Recheado


Excelente prato para o Natal.

Ingredientes:

1 kg lombo de porco
15 a 20 fatias de queijo mozzarella
15 a 20 fatias de bacon
Azeite de oliva
4 dentes de alho picadinhos
1 copo de vinho branco
Temperos:
Sal e pimenta do reino a gosto
Orégano e louro a gosto

Modo de fazer:

1. Fazer uma pasta misturando o alho, o azeite e os temperos.
2. Envolver o lombo com esta pasta e deixar tomar gosto por 2 a 3 horas.
3. Colocar o lombo num refratário e regar com o vinho e um pouco de água
4. Assar o lombo em forno médio.
5. Quando estiver quase no ponto, tirar do forno e cortar o lombo em fatias, mas sem cortas totalmente.
6.Colocar uma fatia de queijo e uma de bacon entre as fatias do lombo.
7. Levar de volta ao forno até derreter o queijo e dourar o bacon.


Stuffed Pork Loin

Mariângela traveled to south to see your family and enjoy the Farroupilha feast. In a lunch that brought together many members of his family, Neusa, the wife of his nephew Alexandre, made this Stuffed Pork Loin, which is different and delicious. Thank you Neusa for the recipe.

ingredients:

1 kg pork loin
15 to 20 slices of mozzarella cheese
15 to 20 slices of bacon
Olive oil
4 cloves garlic minced
1 cup white wine
Spices:
Salt and black pepper to taste
Oregano and bay leaves to taste

Directions:

1. Make a paste by mixing garlic, olive oil and spices.
2. Wrap the loin with this paste and leave to marinate for 2 to 3 hours.
3. Place the loin in a refractory plate and sprinkle with the wine and a little water
4. Bake the pork loin in a medium oven
5. When the loin is almost done, remove from oven and cut into slices, but without cut completely the slices.
6.Put one slice of cheese and bacon between each slices of loin.

7. Bring back to the oven to melt the cheese and golden-brown the baco

Camarão com Catupiry


O queijo catupiry é um requeijão brasileiro, sendo usado em diversos pratos. É uma espécie de requeijão, cuja receita foi desenvolvida e a marca registrada pelo casal de imigrantes italianos, Isaíra e Mario Silvestrini, em 1911. A história começa em Lambari, no Estado de Minas Gerais. Em 1949, a empresa se mudou para a cidade de São Paulo e se instalou definitivamente no bairro do Bom Retiro.

A cremosidade do queijo e sua versatilidade deram origem a uma lista de pratos que parece interminável: camarão com Catupiry, filé de frango ao Catupiry, bacalhau com Catupiry, pão de queijo recheado com Catupiry e a coxinha creme de galinha, clássico das padarias e botecos da capital paulista. Faz sucesso também em pizzas e na versão da sobremesa brasileira conhecida como Romeu e Julieta (goiabada com queijo Catupiry).

Ingredientes:

3 kg de camarões médios com casca
5 tomates picados
2 cebolas picadas
6 dentes de alho amassados
2 colheres de sopa de extrato de tomate
Sal a gosto
1 e ½ caixa de catupiry (cerca de 500 a 600 g)
Azeite de oliva

Modo de fazer:

1.    Descascar e lavar os camarões. (Reservar as cascas, cabeças e rabos para fazer caldo e utilizar em outras receitas, como pirão, sopa ou caldinho aperitivo).
2.    Refogar os tomates, o extrato de tomate, as cebolas e os dentes de alho no azeite de oliva, até os tomates desmancharem. Temperar com sal.
3.    Bater essa mistura refogada no liquidificador.
4.    Voltar com a mistura para a panela
5.    Quando a misturar ferver, adicionar os camarões temperados com sal.
6.    Quando os camarões ficarem com cor, adicionar e misturar o queijo catupiry.
7.    Deixar engrossar em fogo médio, com a panela destampada, até alcançar a consistência desejada.

Shrimp With Catupiry

The catupiry cheese is a Brazilian curd cheese, being used in several dishes. It is a kind of curd cheese, whose recipe was developed and the trademark registered by the Italian immigrant couple, Isaíra and Mario Silvestrini, in 1911. The story begins in the city of Lambari, in the State of Minas Gerais. In 1949, the company was moved to the city of São Paulo and settled permanently in the neighborhood of Bom Retiro.

The creaminess of the cheese and its versatility have given rise to a list of dishes that seem endless: shrimp with Catupiry, Catupiry chicken fillet, cod with Catupiry, cheese bread stuffed with Catupiry, and the creamy chicken thigh, classic of bakeries and bars of the capital of São Paulo. Ingredients:

3 kg of medium shrimp in shell
5 chopped tomatoes
2 chopped onions
6 cloves garlic, crushed
2 tablespoons tomato paste
Salt to taste
1 and ½ box of catupiry (about 500 to 600 g)
Olive oil

Directions:

1. Peel and wash the shrimp. (Reserve the husks, heads and tails to make broth and use in other recipes such mush, soup or appetizer broth).
2. Braise the tomatoes, tomato paste, onions and garlic in olive oil until the tomatoes come undone. Seasoning with salt
3. Beat this braised mixture in the blender.
4. Return with the mixture to the pan
5. When the mixture boils, add the shrimp seasoning with salt.
6. When the shrimp turn color, add and mix the catupiry cheese.

7. Allow to thicken over medium heat, with the pan uncovered, until reaching the desired consistency.

Filé de Peixe com Molho de Cogumelo


Ingredientes
1 colher de sopa de azeite de oliva
1 cebola (picada)
2 dentes de alho (amassados)
130 g cogumelos (fatiados) (nós usamos cogumelos Paris ou champignons)
400 g filés de peixe (nós usamos filé de tilápia)
sal
pimenta do reino
¼ de xícara de vinho branco 
1 colher de sopa de suco de limão

Directions
1. Numa panela ou frigideira, esquente o azeite de oliva e refogue a cebola e o alho até a cebola começar a ficar transparente. Adicione os cogumelos, tempere com sal e pimenta e refogue em fogo médio até os cogumelos ficarem macios.
2. Tempere os filés de peixe com sal e pimenta. Coloque os filés sobre a mistura de cebola, cogumelo e alho. Regue com o vinho branco e o suco de limão.
3. Cubra a panela e cozinhe até ficarem cozidos, sem ficarem desmanchando.
4. Remova o peixe para um prato e coloque por cima o molho.




Fish Fillet with Mushroom Sauce
Ingredients
1 tablespoons olive oil
1 onions (chopped)
2 cloves garlic (minced)
130 g mushrooms (sliced)
400 g fish fillets
salt
Black pepper
1/4 cup whitw wine 
1 tablespoon fresh lemon juice

Directions
1. In a pan or frying pan, heat the olive oil and saute the onion and garlic until the onion begins to become transparent. Add the mushrooms, season with salt and pepper and braise over medium heat until the mushrooms are tender.
2. Season fish fillets with salt and pepper. Place the fillets on the mixture of onion, mushroom and garlic. Drizzle with white wine and lemon juice.
3. Cover the pan and cook until they are cooked, without falling apart.

4. Remove the fish for a dish and place the sauce on top.

Espaguete de Batata Doce no Molho de Tomate com Carne de Porco


Para fazer o espaguete de batata-doce (ou de outro legume: abobrinha, cenoura, inhame, etc) você vai precisar de uma ferramenta de cozinha como a mostrada na foto abaixo.


Observamos que nós fizemos este espaguete e colocamos por cima um molho de tomate com carne de porco picada.
Ingredientes:
·         1 colher de sopa de azeite de oliva
·         3 batatas doces, em forma de espaguete
·         Sal e pimenta do reino
Instructions
1.    Esquentar o azeite numa frigideira ou wok.
2.    Colocar os espaguetes de batata doce e saltear em fogo alto até ficarem cozidos e começarem a ficar dourados.
3.    Tirar do fogo e servir puro ou com um molho de tomate com carne de porco.

Molho de Tomate com Carne de Porco

400 g lombo de porco picado
1 dente de alho amassado
½ cebola ralada
Sal e pimenta do reino
Molho de tomate comprado pronto ou caseiro

Fritar a carne de porco temperada com sal e pimenta do reino junto com o alho e a cebola até ficar dourada.
Esquentar o molho de tomate, adicionar a carne de porco e misturar.





Stir Fry Zucchini Noodles inTomato Sauce with Pork


We noticed that we made this spaghetti and place a tomato sauce on top with sausage meatballs (recipe already shown on the blog)

Ingredients
·         1 tablespoons olive oil
·         3 sweet potatoes, spiralized
·         Salt and black pepper
Directions:

1. Heat the oil in a frying pan or wok.
2. Put the sweet potato spaghetti and saute over high heat until they are tender and start to turn golden.
3. Remove from heat and serve or with a tomato sauce with pork.

Tomato Sauce with Pork

400 g chopped pork loin
1 clove garlic, crushed
½ grated onion
Salt and black pepper
Tomato sauce bought ready or homemade

Fry pork seasoned with salt and black pepper along garlic and onion until golden.
Heat the tomato sauce, add the pork and mix.

Espaguete de Abobrinha


Para fazer o espaguete de abobrinha (ou de outro legume: batata doce, cenoura, inhame, etc) você vai precisar de uma ferramenta de cozinha como a mostrada na foto abaixo.




Observamos que nós fizemos este espaguete e colocamos por cima um molho de tomate com almôndegas de linguiça (receita já mostrada no blog).
Para ele ser light usar apenas o molho de tomate sem as almondegas.
Ingredientes:
·         1 colher de sopa de azeite de oliva
·         3 abobrinhas, em forma de espaguete
·         Sal e pimenta do reino
Instructions
1.    Esquentar o azeite numa frigideira ou wok.
2.    Colocar os espaguetes de abobrinha e saltear em fogo alto até ficarem cozidas e começarem a ficar douradas.
3.    Tirar do fogo e servir puro ou com um molho.

Torta Fit de Frango



A massa dessa torta é sem glúten e lactose, pois é feita com farinha de linhaça dourada.

Massa:
4 xícaras de farinha de linhaça dourada
8 colheres de sopa de azeite de oliva
8 ovos
Sal

Recheio de frango:
4 xícaras de filé de peito de frango cortado em cubos
2 dentes de alho amassados
1/2 cebola picadinha
1 tomate sem pele picado
Louro em pó
Sal e pimenta do reino
Salsa picada

Modo de fazer:

Massa:
Em uma tigela misturar os ovos com a farinha de linhaça, o azeite e 1 pitada de sal. Deixar descansar por 15 minutos (a massa vai mudar de textura e ficar mais grossa).

Recheio:
Refogar todos os ingredientes na panela e, conforme for secando, ir pingando água até os temperos desmancharem e o frango estiver cozido. No final adicionar a salsa e misturar.

Montagem:
Colocar uma camada da massa no fundo e nas laterais (cerca de 2 ½ xícaras).
Por cima, colocar o recheio de frango
Finalizar com outra camada de massa.

Assar em forno a 230º C por 20-25 minutos







Fit Pie of Chicken

The pie dough is gluten-free and lactose free

Dough:
4 cups golden flaxseed flour
8 tablespoons olive oil
8 eggs
salt

Stuffing:
4 cups diced chicken breast fillets
2 cloves garlic, crushed
1/2 onion finely chopped
1 tomato skinless crushed
Bay leaf, powder
Salt and black pepper
Chopped parsley

Directios:

Dough:
In a bowl mix the eggs with the flaxseed flour, olive oil and 1 pinch of salt. Let stand for 15 minutes (the dough will change in texture and become thicker).

Filling:
Braise all ingredients in the pan and, as it is drying, drip water until the seasonings are cleared and the chicken is cooked. At the end add the parsley and mix.

Assembly:
Place a layer of dough on the bottom and sides (about 2 ½ cups).
Put the chicken stuffing over.
Finish with another layer of dough.


Bake in a 230 ° C oven for 20-25 minutes

Bife de Costela com Batata




Ingredientes:
6 bifes de costela (pode usar também a costela com osso)
1 tomate picado
1 cebola picada
2 dentes de alho amassados
1 colher de sopa de extrato de tomate
1 folha  de louro
Páprica picante a gosto
Sal a gosto
3 xícaras de água
Óleo vegetal

4 batatas cortadas ao meio

Modo de fazer:
1. Colocar todos os ingredientes (exceção das batatas) numa panela de pressão e refogar no óleo, sem a tampa, até a carne começar a dourar.
2. Adicionar 3 xícaras de água e tampar a panela de pressão.  Cozinhar por 15 minutos.
3. Desligar o fogo, deixar sair o vapor e abrir a panela. Adicionar as batatas e cozinhar, junto com a costela, até as batatas ficarem macias. Se necessário acrescentar mais um pouco de água.

Rib Steak with Potato

Ingredients:
6 rib steaks (can also use rib with bone)
1 chopped tomato
1 chopped onion
2 cloves garlic, crushed
1 tablespoon of tomato paste
1 bay leaf
Spicy paprika to taste
Salt to taste
3 cups water
Vegetable oil

4 potatoes cut in half

Directions:
1. Put all ingredients (except potatoes) in a pressure cooker and braise in the oil, without the lid, until the meat begins to golden-brown.
2. Add 3 cups of water and cover the pressure cooker. Cook for 15 minutes.
3. Turn off the heat, let the steam out and open the pan. Add the potatoes and cook, along with the rib, until the potatoes are tender. If necessary, add a little more water.

Bolo de Espinafre



Uma boa opção também para os veganos que não têm restrições contra ovo e leite.

Serve: 6

Ingredientes:

4 xícaras de espinafre cozido e picado
Azeite de oliva
1 1/2 xícaras de queijo mussarela picado ou ralado
1/3 xícara de cebolinha ou alho porro picado (nós usamos cebolinha)
8 ovos batidos
Sal, pimenta do reino, cominho e páprica a gosto
Modo de fazer:

1.    Pré-aquecer o forno a 190oC. Untar um refratário com azeite de oliva.
2.    Aquecer um pouco de azeite de oliva numa panela. Adicionar o espinafre e cozinhar rapidamente (abafar com a tampa da panela) até murchar (cerca de 2 minutos). Colocar o espinafre num escorredor para tirar toda a água. Picar e temperar com sal e pimenta do reino. Transferir o espinafre para o refratário, espalhando até formar uma camada uniforme.
3.    Colocar por cima do espinafre uma camada de mussarela picada e uma de cebolinha.
4.    Bater os ovos e temperar. Colocar os ovos batidos sobre a combinação de espinafre/queijo. Usando um garfo fazer o ovo se misturar bem à combinação.
5.    Assar por cerca de 35 minutos ou até começar a dourar.







Spinach Cake

 A good choice also for vegans who have no egg and milk restrictions.

yield: 6 SERVINGS


4 cups fresh spinach cooked and chopped
olive oil
1 1/2 cups mozzarella chopped
1/3 cup thinly sliced chives ror een onions (we use chives)
8 eggs, beaten
Salt, fresh ground black pepper, cumin and paprika to taste
Directions:
1. Preheat the oven to 375F/190oC. Grease a refractory with olive oil.
2. Heat olive oil in a saucepan. Add the spinach and cook quickly (smother with the lid of the pan) until wilting (about 2 minutes). Put the spinach in a colander to remove all the water. Chop and season with salt and black pepper. Transfer the spinach to the refractory dish, spreading to form a uniform layer.
3. Spread a generous layer of chopped mozzarella and a layer of chives on the spinach.
4. Beat the eggs and season. Place the beaten eggs over the spinach / cheese combination. Using a fork make the egg blend well with the combination.
5. Bake about 35 minutes or until the mixture is completely set and starting to lightly brown.

Bife de Lombo de Porco Grelhado


Apesar de o Brasil ser o quarto maior produtor de carne suína no mundo, o consumo ainda é baixo no país. A carne de porco é vista, muitas vezes, como uma carne gordurosa e que pode transmitir doenças. Mas, desde os anos 1970, as condições de criação de porcos mudaram bastante, o que resultou em uma carne mais saudável e segura. Hoje, o rebanho tem uma alimentação balanceada, ambientes higienizados e com temperatura controlada, além de assistência veterinária constante. Com essas mudanças houve uma diminuição de 31% da gordura, 14% de calorias e 10% do colesterol na carne suína.

Os níveis de gordura da carne de porco são, hoje em dia, equivalentes ou até melhores do que os apresentados pela carne bovina ou de frango. Além disso, ela é rica em magnésio, potássio, ferro, fósforo, selênio e vitaminas do complexo B. Ela também é a principal fonte animal da vitamina B1, também conhecida como tiamina.

Um outro fator importante para aumentarmos o consumo de carne suína é o seu preço, pois é mais barato do que a carne bovina e quase o mesmo preço da carne de frango sem osso.

Ingredientes:
Bifes de lombo de porco
Alho
Molho shoyo
Pimenta do reino

Modo de fazer:
Deixar os bifes marinando nos temperos por umas 3 horas.
Grelhar os bifes em chapa não aderente.





Grilled Pork loin Steak

Although Brazil is the fourth largest producer of pork in the world, consumption is still low in the country. Pork is often seen as a fatty meat that can transmit disease. But since the 1970s, pig farming conditions have changed a great deal, resulting in healthier and safer meat. Today, the herd has a balanced diet, hygienic environments and controlled temperature, as well as constant veterinary care. With these changes there was a 31% decrease in fat, 14% in calories and 10% in cholesterol in pork.

Fat levels of pork are now equivalent to or even better than beef or chicken. In addition, it is rich in magnesium, potassium, iron, phosphorus, selenium and B-complex vitamins. It is also the main animal source of vitamin B1, also known as thiamine.

Another important factor to increase the consumption of pork is its price, because it is cheaper than beef and almost the same price of chicken meat without bone.

Ingredients:
Steaks of pork loin
Garlic
Shoyo sauce
Black pepper

Directions:
Leave the steaks marinating in seasonings for about 3 hours.

Grill the steaks on non-stick plate.

Batata Doce Ralada com Cebola


Essa receita de batata doce é um excelente acompanhamento para carne de porco, sendo fácil e rápida de fazer.

Ingredientes:

Batata doce ralada
Cebola picada
Azeite de oliva
Sal e pimenta do reino

Modo de fazer:
1. Temperar a cebola e a batata doce com sal e pimenta do reino
2. Em uma frigideira com um pouco de azeite, refogar a cebola até ela ficar transparente.
3. Adicionar a batata doce e continuar refogando até a batata doce começar a ficar dourada.






Sweet Potato Grated with Onion

This sweet potato recipe is an excellent side dish for pork, being easy and quick to make.

Ingredients:

Grated sweet potato
Chopped onion
Olive oil
Salt and black pepper

Directions:
1. Season the onion and sweet potato with salt and black pepper
2. In a frying pan with a little of olive oil, braise the onion until it becomes transparent.

3. Add the sweet potato and continue to braise until the sweet potato begin to turn golden.

Peixe Assado a Moda de Búzios


No último fim de semana estivemos em Búzios para aproveitar os dias ensolarados do nosso inverno, uma vez que a Região Sudeste está passando por uma forte estiagem e não chove há mais de 20 dias. Infelizmente não fomos a praia, porque as temperaturas estavam pouco acima de 20º C e ventava muito. Assim, curtimos mais o ambiente de nossa casa e as atrações noturnas da cidade.





Desta vez deixamos o cardápio por conta de nossa colaboradora, a Fabiana, que fez um Peixe Assado a Moda de Búzios. Ela utilizou uma receita de família que a maioria das pessoas da região sabe fazer. É uma receita simples típica dos pescadores locais, cuja vida dura é levada com simplicidade.

Devo lembrar que Búzios era uma vila de pescadores, que durante muito tempo ficou isolada diante da dificuldade de acesso por terra. Existia apenas uma estrada de terra em péssimo estado de conservação ligando Búzios a Cabo Frio, que no verão, quando chovia, ficava intransitável. O principal meio de transporte era realizado através de barcos, que levavam o resultado da pesca para o mercado de Cabo Frio. Esse isolamento permaneceu até que a atriz francesa Brigitte Bardot foi passar umas férias na região. A partir daí o município se tornou, aos poucos, um dos principais centros turísticos do Estado do Rio de Janeiro, principalmente com a construção de uma estrada asfaltada.



A Fabiana usou na sua receita uma marinada com óleo vegetal, vinagre de vinho branco, sal, alho picado e limão. Pegou uma anchova inteira, já limpa, deu uns talhos na lateral e regou com essa marinada, deixando umas 2 horas para tomar gosto. A seguir assou em forno médio por cerca de 20 minutos. O peixe foi servido com umas batatas cozidas na água e sal, arroz e uma salada de folhas verdes.



No dia seguinte, fizemos umas pernas (coxa e sobrecoxa) de frango com pele na churrasqueira, temperadas apenas com sal grosso, ou seja, a moda gaúcha. Na fotografia pode-se observar que fizemos as pernas numa churrasqueira rústica de roda de caminhão que temos na casa.



Baked Fish Buzios-Style

Last weekend we were in Búzios to enjoy the sunny days of our winter, since the Southeast is going through a strong dry season and it has not rained for more than 20 days. Unfortunately we did not go to the beach because the temperatures were just above 20º C and and there was a strong wind. Thus, we enjoy the atmosphere of our house and the nocturnal attractions of the city.

This time we left the menu on behalf of our collaborator, Fabiana, who made a Baked Fish Buzios-Style. She used a family recipe that most people in the area know how to do. It is a simple recipe typical of local fishermen, whose hard life is taken with simplicity.

I must remember that Buzios was a fishing village, which for a long time was isolated by the difficulty of access by land. There was only a dirt road in poor condition linking Búzios to Cabo Frio, which in the summer when it rained was impassable. The main means of transport was carried out by boats, which brought the result of fishing to the Cabo Frio market. This isolation remained until the French actress Brigitte Bardot went to spend a vacation in the region. From there the municipality gradually became one of the main tourist centers of the State of Rio de Janeiro, mainly with the construction of an asphalted road.

Fabiana used to marinade the fish a mix of vegetable oil, white wine vinegar, salt, chopped garlic and lemon. He took a whole blue fish, already cleaned, gave some butchers on the side and watered with this marinade, leaving about 2 hours to taste. Then baked in medium oven for about 20 minutes. The fish was served with boiled potatoes in water and salt, rice and a salad of green leaves.


The next day, we made some legs (thigh and drumsticks) of chicken with skin on the grill, seasoned only with coarse salt, that is, gaucho style. In the photograph you can see that we made our legs in a rustic truck wheel grille that we have in the house
